Salsa Verde

So easy to make just toss most of the ingredients in the broiler!
To make mine I just used what I had so I'll give you the approx amounts but as with any cooking taste and taste again.

5 tomatillos
4 cloves of garlic skin on
1 jalapeno

These are going under the broiler. I did 7 minutes the first side, 5 after I flipped them all over and another 7 just turning them so the uncharred parts got a bit more heat,

While that was in the oven ( set a timer so you don't lose track)

1/4 large yellow onion rough chop, if you have white onion you may want to use less.
1/2 lime
1 tbls pink salt (sea salt is fine but I always encourage unprocessed salts which still have their minerals)

toss these into a food processor.

take the roasting veggies out and peel off the really burned parts of the tomatillos and jalapeno, discard the skins from the garlic and toss into them all in the food processor. I like the burned bits so I leave some still on.

blend to the consistency you like, and taste taste taste! you may like more lime, or your onion may not have been as strong as you like, add a little more and retaste!
