
I got the basis for this recipe from a care2 blog post years ago. I've made different versions over the years adding things taking things out. This is the basic recipe. Feel free to add raw cacao, raw shredded coconut, strawberries or what ever!
Gotta have something special for the holidays so I decided to make a dessert. A no sugar no dairy healthy redeeming dessert. No small challenge.
This took 15 minutes to make aside from the soaking. I made it yesterday, and had a slice this morning for breakfast with my roasted dandelion root tea. It was like pie and coffee but good for me. I WIN!
When you use nuts soak them first 2hr minimum if you plan ahead do it overnight.
1/2 cup almond
1/2 cup walnuts
1/2 cup dates also soaked.
This is going into your food processor, from there press into a pie dish, I happen to have a giant pie dish so next time I make this I'm going to make more, but it was all the nuts I had so that's that!
You could use an assortment of nuts here, these are what I had on hand and full of omega 3s.

Now take two bananas and slice enough to cover the bottom of the pan. If you don't need two whole ones toss the extra into the processor.
The final close up. I used frozen organic wild blueberries so after the cup in the filling I sprinkled the rest of the bag on top. You could mix them into the filling, you could add some walnuts or almonds on top to make it pretty, you could sprinkle some shredded coconut over the top as well. Get creative! I was cooking for myself and while I thought it looked delish I didn't get to crazy with the presentation.
