Day 14. I'm getting there! I think I've hit my stride. I've found some good sweet alternatives. I bought a whole mess a sweet potatoes, carrots are everywhere, and figs have been stashed away in case of emergency.

I taught classes this morning and took my customary smoothie. I knew I was going for a hair cut at my friends place so I took lunch with me. The rest of the hummus and lettuce from my CSA box, an orange and a couple carrots also from the box. I went to Sprouts one of my favorite stores for bulk items and healthy alternative and spent way too much but now I have food for a very long time! Or what feels like it today trying to cram everything into my fridge.
Yesterday I took all my spicy black bean burgers with all the fixins to Venice Beach, where one of my favorite people live. 6 men sat down to a dinner of Spicy Black Bean Burgers, wrapped in a cabbage leaf with fennel sprouts, kale hummus, tomatoes, leeks, jalapeno, parsley, radishes, and the last of my homemade salsa verde. They ate every last bit. YES! I feel like I won, not sure what but I definitely won something.
I'm looking forward to some cooking later tonight, I bought fresh wild caught shrimp and scallops. I'm not sure what they will be yet...
Drinking my kombucha currently, one of my goals is to start making my own kombucha. If anyone has any tips let me know. I need to buy a large glass jar, that much I know lol.
I also bought a bunch of coconut to make my own milk. The brown rice milk I've been making for the cleanse is great but I miss my coconut milk and since I can't find any that has less than 5 ingredients (or it's got preservatives/sugar) it's time to learn how to make my own! I'll let you know how it goes :)
Dinner! Shrimp, Scallops, and Asparagus with Meyer Lemon, Garlic and Fennel
Dinner! Shrimp, Scallops, and Asparagus with Meyer Lemon, Garlic and Fennel
4 large wild scallops
4 organic asparagus (use as much as you like!)
2 tbl organic butter
Zest and juice of 1 Meyer Lemon, organic
maybe 1/2 cup broth? I just splashed some bone broth I made from the chicken in here.
4 large organic garlic cloves smashed and chopped. Let sit at least 10 mins before cooking
1/2 bulb organic fennel
Big hand full of organic parsley. I don't even chop it just pull the leaves off the stems and done.
In heavy bottomed pan heat butter til melted. On med low heat add garlic let it cook til it starts to smell amazing, maybe 3-5 mins, don't let it brown just infuse the butter with garlic so a nice low heat.
Add lemon zest, cook another minute and then add 1/2 the lemon juice. Toss in the fennel cook for another minute or so softening the fennel.
Add the shrimp, let them start to turn pink on one side then flip. After you've flipped them add enough stock to come about half way up the shrimp. It's mostly to steam them and thin the butter a bit.
Let the little guys cook until they have turned pink but not cooked through just a few minutes, then add the scallops. Depending on how well done you like them will determine how long you cook the scallops.
Cook about two minutes then flip the scallops and add the parsley. Once the shrimp are done take them out, and once you're happy with the scallops take them out.
Toss the asparagus in the butter, cover the pan and steam them until they turn bright green, just a few minutes not to long, you want them to be firm and crispy still.
Scoop the asparagus onto the plate with the shrimp and scallops pour everything in the pan over everything on the plate. Take a deep breath, smell the amazing meal you are about to eat, smile really big and slowly enjoy every bite!
