I had the other half of the raw buckwheat for breakfast, can you tell I'm in love!? It's so simple to make, and so tasty. It really is great for the mornings I don't have to make a smoothie and run. I'm going to have some good old fashioned left overs for lunch. I'm looking forward to the fact that my left overs are still fresh foods I have and am really feeling good.
This challenge has been great, I don't get to have an excuse to be lazy about my food, and it's paying off. I feel stronger, and sharper. I've been adding more raw foods in because it's easy to ferment tomatoes on my day off and have sauce ready for the weekend when I don't have time to cook. It's crazy to think there are raw foods that are easy to prepare and use when I don't have time! I never would have guessed, and I certainly wouldn't have looked into it. This has been enlightening and I'll certainly keep using some of these recipes again.
