I've officially hit the half way point! I'm actually a little sad to turn the corner, I feel like I'm just getting started. I'm enjoying this totally whole food diet and I don't think I'll be heading back to processed foods anytime soon. On the other hand, I'm very much looking forward to a nice glass of dark red wine with a piece of amazing chocolate from the farmers market. I haven't even decided which one yet!
I've added a little something to this cleanse. Another cleanse.
Yep you read that right. I've done a spring cleaning before, not nearly as intense and certainly not limiting foods completely but I've done a 14 day cleanse before. High fiber, digestive enzymes (various herbs and roots) and liver enzymes (also various herbs and roots).
I've already mentioned the dandelion root tea, it's got a ton of health properties such as:
-enhancing detoxification, and in the process replaces lost potassium
-supports liver, kidney and gallbladder functions
-purify the blood
-cleansing the digestive and circulatory systems
-cleanse and improve skin
It's really an amazing herb, and does quite a bit else, its been used for type 1 and 2 diabetes, jaundice and all liver disorders, digestive issues including constipation and diarreha. On top of all that it's loaded with vitamins and minerals ACD and B complex, iron, magnesium, zinc, potassium, manganese, calcium...
So I figured while I'm eating whole foods, cutting out all simple carbs, bad oils and fats, sugar, booze, caffeine, and preservatives it's the perfect time to up the ante. I'll finish this bad boy cleanse with-in a cleanse out. I'll finish the herbal cleanse one day before the food cleanse.
Let's kick this cleanse into high gear! Who's with me?!?!

Oh well, on to the recipes!
Sundried tomatoes being rehydrated
4 tomatoes, a big handfull of sundried tomatoes, 3 garlic cloves, a handfull of parsley 2 tbls raw apple cider vinegar. Put in the blender or food processor and then pour in a mason jar, let sit 3-5 days and ferment.
I have no idea how it's gonna taste but I'll let you know in about a week!
Pumpkin seeds being activated, just soak for an hour or two and done!

Buckwheat soaking, at least two hours or overnight, rinse, rinse rinse before and then let soak.
The soaked buckwheat, homemade coconut milk, a little raw honey, a handful of soaked almonds, run through the food processor.

Topped with a chopped date, a quartered fig, and 5 organic cherries.
Breakfast of Champions (don't tell Kurt Vonnegut)

Soaking the coconut. I used the whole bag about two cups then about 4 cups water to soak. Soak at least two hours.
Blend Blend Blend. I broke it up into two batches and added a little more water. You can add all sorts of things here, honey or stevia, cacao, vanilla...
Strain through a fine mesh (I strained half, the unstrained half will go right into smoothies, I don't mind the coconut bits in there!)
Chicory tea with coconut milk. YUM!
