Day 22!

Whoa, didn't see that one coming. I just realized I'm done next week! I've fallen in love with this, cooking amazing food. Feeling really put back together. I'm feeling good, its hard to describe but I feel lighter. No I didn't lose any weight which is a good thing for me. I'm fine right where I am, but I feel a bit more nimble! I'm sleeping well waking just before my alarm, and feeling awake. It's like magic! I'm getting a ton of stuff done, tho to be fair I follow Douglas Adams when he said "I love deadlines. I like the whooshing sound they make as they fly by". But I'm taking time to keep myself sane and that involved hiking up mountains and spending time with my nearest and dearest friends. Next week I'm going to celebrate with a dinner party before the cleanse ends. My favorites of the month in feast form. I'm hoping my friends will come and be delighted. We shall see.

So I had the fermented tomato sauce for dinner last night. I made zucchini spaghetti and topped it with the tomato sauce and sprouts.



This is the raw version of spaghetti and marinara. I bought a spiralizer a while ago and I wanted to use it for this recipe. I've been wanting to try raw zucchini spaghetti and I finally did.



What a great idea. I'm truly blown away by how good this dinner was; and filling. My friend Rex joined me for juice at Sustain and then came over for dinner. A brave sporting gal she is. We were gonna make artichokes and a salad, we made neither. We toasted a piece of sprouted bread to scoop the extra sauce with and I could just eat the sauce on the toast. I'm sure I will tomorrow.


-the measurements are approx. I used a recipe from Hungry for Change, a movie I've been yelling about on Facebook. But I used what I had so the measurements are different and slightly mixed up.
The recipe:

3 cups tomatoes, the richer the better
1 cup sun dried tomatoes, soaked
3 cloves garlic, mine have may just been strong but if you don't love garlic try 1
3 dates pref fresh, but I used dried so I soaked them 2 hrs with the sun dried tomatoes.
OR
2 Tbs raw honey
1/2 jalapeno
1 dried and smoked red chili
1 handful fresh basil
1 handful fresh parsley
2 tsp good salt (pink Himalayan)
3 Tbs raw apple cider vinegar. Raw is crucial, you must have the cultures in raw apple cider vinegar.

blend in food processor or blender

pour into a mason jar or glass jar with good lid. Cover and let stand 3-5 days it will bubble a little bit, taste it. If it's got a bit of zing to it your good! You can let it sit a little longer if you'd like but not to long, stick it in the fridge until you're ready. It will stay like that sealed for about 3 months, opened for about 2-3 weeks.

I poured maybe a 1/4 - 1/2 a cup EVOO after the fermenting. I just thought it would bring a great flavor to the sauce and it did. This is totally optional you could just add a little to what ever you're eating.

Try this recipe, at least the sauce. It's so freaking good, I really want people to give it a shot. Play with it, add cilantro instead of basil, add fresh oregano, add more heat with chilies...
